Description
Mandheling is the common name for Sumatran Arabica. Sumatran coffee is unique in cup and physical preparation Harvest carries on throughout the year, little by little as the seasons are not regular. The green processing is also unique, after the cherries are picked they are pulped and then left to ferment in a sack overnight or until the next clear weather day when they will be partly dried and then hulled in the still particularly wet parchment. This processing technique is locally called ‘giling basah’.There are a number of different varieties grown in Sumatra, Timor or TimTim, Catimor and Caturra cultivars and a number of other local varietals have developed. The soil is volcanic andrich in nutrients that contribute to the unique flavours of Mandheling coffee.

Cooperatives have been trained to Fairtrade international levels, covering social living standards, working conditions and GAP (Good agricultural practices). Fairtrade certification guarantees the farmer a minimum price for the coffee and therefore reduces their risk against international market volatility. Often Fairtrade farmers opt to produce their coffee organically in order to improve quality and maintain good long term productivity on their farms.

A wonderful South American coffee, soft acidity, a very smooth medium body, a pleasing sweetness, and finishing with a subtle Smokey flavour.

Large   ‘Typica’  varietal. Cherries are sourced from the dominant cultivar used in Peru. Both acidity and body are medium, but the typical combined with altitude and the soil-microclimate produce an interesting flavour mix typical of the Peruvian region.

This coffee is very high grown in northern Peru, where many of the  organic coffee growers have been certified organic for over 2 decades. Grown from heirloom arabica typica cultivars which require a heavy shade cover to thrive.

Cupping Notes: mild lemon, cocoa, almonds – roasted at full medium
